INIMAHSUMEDANG
Wah, tentunya sudah bukan hal yang asing lagi untuk wargi Sumedang nih tentang salah satu kuliner khas Sumedang ini, namanya sudah terkenal ke beberapa pelosok daerah. Yaps, Ubi Cilembu!
Ubi madu yang merupakan kultivar ubi jalar lokal yang berasal dari Desa Cilembu, Kecamatan Pamulihan, Sumedang. Ubi cilembu telah ada sejak tahun 1990 dan hanya ada di Indonesia.
Rasanya yang manis alami dan nikmat, rasa manis dari ubi tersebut, didapat dari kondisi dan karakteristik tanah di Sumedang loh! Serta kandungan unsur hara yang sangat cocok dengan pertumbuhan ubi.
Konon katanya ubi Cilembu, hanya akan manis apabila ditanam di tanah Sumedang. Menurut penelitian Agustina Monalisa Tangapo dari ITB, rasa manis dari ubi teraebut dipengaruhi oleh keanekaragaman dan populasi mikrobiologi, khususnya bakteri rizosfer dan endofit pada ubi Cilembu.
Nah begitulah, jadi hal tersebut menjadi salah satu faktor penyebab adanya perbedaan rasa manis, antara ubi Cilembu yang ditanam di Desa Cilembu dan di luar Desa Cilembu. Lebih manis lagi jika si ubinya di panggang loh!
Ubi Cilembu diketahui memiliki tekstur lembut, aroma harum, dan cairan manis seperti madu yang sangat menggoda menjadi keunggulan ubi tersebut. Akan lebih terasa dan jelas apabila ubi dimasak dengan cara dipanggang.
